Roasted Sweet Potatoes

Easy and healthy sweet potato recipe that was a big hit!
  • 2 medium sweet potatoes, cubed (I used 6...just increase the rest for how many sweet potatoes you're using)
  • 1 tsp olive oil
  • 1 Tbsp chili powder
  • 1 Tbsp cinnamon
  1. Preheat oven to 400.
  2. In a large bowl, drizzle olive oil over sweet potatoes. Add cinnamon and chili powder and stir, shake or toss until coated.
  3. Spread on a baking sheet and cook for 30 minutes, stirring about halfway through.
